We’re way into BBQ season (at least when the weather permits here in the UK), which you can also reasonably call snack and appetiser season. I just love loading up my plate with lots of different bits and pieces to try. And contrary to popular belief, BBQing definitely does not have to exclude vegans. In fact, the whole thing can be made vegan. Just switch out the main meat dish for a mock meat alternative or a tofu-based recipe, and make sure there are plenty of other options for people to add to their plates. Add a couple of sauces and a good selection of drinks, and you’re good to go!

To provide you with a completely foolproof recipe, today I’m sharing my favourite vegan potato croquettes. This is a finger food or snack that everyone will love. To be honest, whenever I make them, it’s hard not to eat the whole batch by myself as a main course!

My love for croquettes goes way back. I remember when I tried my first one, it was definitely love at first bite. So, when I set about to veganise them, I wanted to surpass my own expectations. After a couple of failed batches, that’s exactly what the finished product did.

These vegan croquettes are a perfect side dish, snack, starter or appetiser, served either hot or cold. Underneath a crunchy, slightly chewy outside is a melt-in-your-mouth soft potato centre interlaced with morsels of vegan cheese and just the right amount of dill and spring onion. The overall flavour is deep and slightly earthy, with hints of tanginess from the cheese. In other words, totally moreish!

Serve these potato croquettes with any dip of your choice. For instance, ketchup or any other tomato-y alternative always works well, but you could also go for something like hummus, vegan yoghurt, or a tahini-based dip.

What to add to vegan croquettes

The croquettes themselves are totally versatile. If you feel like switching them up and personalising the recipe, feel free to add other vegetables and/or spices. For example, I love adding finely chopped bell pepper, sweetcorn or peas to my potato croquettes. In terms of spices, you can really make these different by adding curry powder or paprika, for example.

How to make these croquettes

  • Preheat the oven to 180 degrees C/350 F.
  • Add the potatoes to a saucepan of boiling water with a pinch of salt and boil for 12-15 minutes, until fork tender.
  • Add the boiled potatoes to a large mixing bowl and mash with a potato masher. Then, add the garlic, dill, green onion, vegan cheese, flour, salt and almond milk. Mix the ingredients together until well-combined.
  • Dampen your hands slightly and roll the dough into croquette shapes, and arrange them on a sheet of baking paper.
  • Bake in the preheated oven for 10-15 minutes, until crispy on the outside but still soft on the inside. Serve immediately or leave to cool before serving.

  • 2 cloves garlic, minced
  • 2 tbsp dill, chopped
  • 2 stalks spring onion, chopped
  • 2 oz vegan cheese, grated or finely chopped
  • 4 oz gluten-free flour
  • 1/2 tsp salt
  • 1/4 cup almond milk, or any other plantbased milk of choice

Instructions
