Vegan Croquettes (Gluten-free & Easy)
These vegan croquettes are a perfect simple appetiser or snack to bring along to parties and gatherings. Crunchy on the outside and melt-in-your-mouth soft on the inside, they are an easy to make, flavourful treat. The addition of vegan cheese really helps take these croquettes to the next level!
Preheat the oven to 180 degrees C/350 F.
Add the potatoes to a saucepan of boiling water with a pinch of salt and boil for 12-15 minutes, until fork tender.
Add the boiled potatoes to a large mixing bowl and mash with a potato masher. Then, add the garlic, dill, spring onion, vegan cheese, flour, salt and almond milk. Mix the ingredients together until well-combined.
Dampen your hands slightly and roll the dough into croquette shapes, and arrange them on a sheet of baking paper.
Bake in the preheated oven for 10-15 minutes, until crispy on the outside but still soft on the inside. Serve immediately or leave to cool before serving.
