These vegan croquettes are a perfect simple appetiser or snack to bring along to parties and gatherings. Crunchy on the outside and melt-in-your-mouth soft on the inside, they are an easy to make, flavourful treat. The addition of vegan cheese really helps take these croquettes to the next level!

Ingredients

  • 12 oz potatoes, peeled
  • 2 cloves garlic, minced
  • 2 tbsp dill, chopped
  • 2 stalks spring onion, chopped
  • 2 oz vegan cheese, grated or finely chopped
  • 4 oz gluten-free flour
  • 1/2 tsp salt
  • 1/4 cup almond milk, or any other plantbased milk of choice

Instructions 

  • Preheat the oven to 180 degrees C/350 F.
  • Add the potatoes to a saucepan of boiling water with a pinch of salt and boil for 12-15 minutes, until fork tender.
  • Add the boiled potatoes to a large mixing bowl and mash with a potato masher. Then, add the garlic, dill, spring onion, vegan cheese, flour, salt and almond milk. Mix the ingredients together until well-combined.
  • Dampen your hands slightly and roll the dough into croquette shapes, and arrange them on a sheet of baking paper.
  • Bake in the preheated oven for 10-15 minutes, until crispy on the outside but still soft on the inside. Serve immediately or leave to cool before serving.
