This vegan watermelon salad with cucumber, strawberries and feta is the perfect side dish for warm weather. It’s tangy, with a hint of spice, and doesn’t require any cooking. Gluten-free and ready in 15 minutes.

Ingredients

  • 1 small watermelon
  • 1 large cucumber, chopped
  • 1 large red onion, diced
  • 1 large avocado, cubed
  • 2 cups watercress
  • 1 tbsp olive oil
  • 1/2 cup capers
  • 1/4 cup almond flakes
  • 1/4 cup lime juice, (around 2 limes)
  • 2 cloves garlic, minced
  • 1/2 cup dill, chopped
  • 1 tsp paprika
  • 1 tsp salt
  • 10 oz strawberries
  • 1/2 cup mint
  • 1/4 cup vegan feta

Instructions 

  • Prepare the watermelon. Remove the top and the bottom of the watermelon, then cut around the edges to remove the shell. Next, lay the watermelon on the side and cut it in half. Now cut each half into three equal segments. You can then proceed to cut it into even-sized cubes.
  • To a mixing bowl, add the watermelon, cucumber, onion, avocado, watercress, olive oil, capers, almond flakes, lime juice, garlic, dill, paprika, salt and strawberries to a large mixing bowl and stir together thoroughly.
  • Serve the watermelon salad garnished with mint and vegan feta.
