These vegan carrot cake bliss balls taste like an indulgent dessert, but are healthier, oil-free, and sweetened with dates. The texture is soft and chewy, which is perfect coated in either a chocolate glaze or desiccated coconut. Enjoy as a simple make-ahead snack!

Ingredients

  • 1 cup pitted medjool dates, soaked in warm water for 15 minutes
  • 1 cup carrot, grated
  • 1/2 cup pecan nuts
  • 1/3 cup coconut flour
  • 1/4 cup smooth peanut butter
  • 2 oz dark chocolate , melted
  • 1/4 cup desiccated coconut

Equipment

  • Blender or food processor

Instructions 

  • Add the dates, carrot, pecan nuts, coconut flour and peanut butter to a blender or food processor. Blend until a thick 'dough' forms. If the dough is too sticky, add more coconut flour.
  • Shape the dough into even-sized balls. 
  • Roll the dough in the melted dark chocolate and/or desiccated coconut. Leave to chill in the fridge for at least 30 minutes, or overnight.
