Vegan Banana Oatmeal Cookies (Gluten-free, Oil-free)
Vegan banana oatmeal cookies! These flavourful, soft and chewy cookies are naturally sweetened with banana, making them a a perfect breakfast, snack and dessert alike. Gluten-free and oil-free.

- 1.5 cups gluten-free oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 2 tbsp chopped nuts
- 2 medium bananas mashed
- 1 tbsp apple cider vinegar
- 1/4 cup vegan chocolate chips
Preheat the oven to 180 degrees C/350 F.
Add the oats, baking powder, baking soda and cinnamon to a large mixing bowl and whisk together.
Add the bananas, apple cider vinegar and stir until all the ingredients are well-combined. Then, fold in the chocolate chips.
Roll the dough into cookie shapes and arrange them on a sheet of parchment paper. Bake in the oven for 10-12 minutes.
