This cheesy sweet potato noodles recipe with black beans and spinach is guaranteed to become a favorite! It’s entirely vegan, dairy-free and great as either a main course or a side dish that’s ready in 15 minutes.

Ingredients

  • 1 tbsp olive oil
  • 1 lb sweet potato, spiralised
  • 2 tbsp vegan butter
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 2 tbsp flour
  • 1 1/2 cups plant based milk
  • 1/2 cup vegan cheese
  • 1 can black beans
  • 1/2 cup scallions, chopped
  • 3 cups spinach

Instructions 

  • Heat the olive oil in a frying pan and add the spiralised sweet potato. Fry for around 5 minutes, tossing frequently, until starting to brown.

  • Melt vegan butter in a saucepan over a medium heat and add an onion, garlic, salt, pepper, paprika, cumin and onion powder. Cook for 5 minutes, until softened and fragrant.

  • Add flour and stir together, before gradually adding in plant based milk and whisking until the sauce thickens before adding more.

  • Add grated vegan cheese and stir once again until the cheese melts.

  • Add the black beans to the noodles together with the sauce, followed by spinach and scallions. Serve when the spinach wilts.
