Vegan eggnog made with cashews and coconut milk! This Christmas drink is incredibly thick and indulgent, making it a perfect crowd-pleasing recipe for parties. Gluten-free, oil-free and dairy-free.

Ingredients

  • 1.5 cups cashews, soaked for at least 4 hours
  • 1 can coconut milk, full-fat works best
  • 1/2 cup water
  • 3 tbsp maple syrup
  • 2 tbsp desiccated coconut

Equipment

  • Blender or food processor

Instructions 

  • Drain and rinse the soaked cashews.
  • Add the cashews to a blender or food processor together with the coconut milk, water, maple syrup, and desiccated coconut. Blend until smooth.
  • Serve after either chilling in the fridge for around 30 minutes, or heat on the stove over a low heat for five minutes.
