How to make vegan potato samosas

Crunchy and flaky, they make an amazing snack!

Ingredients

Step 1

Cook the potatoes in a saucepan for 30 minutes, until fully fork-tender.

Peel and mash the potatoes roughly, making sure to keep some texture.

Add the vegetable oil or olive oil to a large pan over a medium heat. Add the coriander seeds, cumin seeds, ginger and garlic. Cook for 4-5 minutes.

Add the mashed potatoes, garam masala, paprika, cumin, green peas and tomato paste. Stir together thoroughly, then season with salt and pepper.

Prepare the filo pastry sheets, then fold them and add the filling in the centre.

Seal together the edges, and the samosas are now ready to be cooked.

Fry the samosas in vegetable oil for a couple of minutes, until crispy and golden brown.

You can also brush them with plant based milk, add sesame seeds and bake at 350 degrees F for 25 minutes.

Serve the samosas with any dip of your choice, such as mango chutney, and enjoy!
