DELICIOUS VEGAN PULLED 'PORK'
This vegan pulled 'pork' is a fantastic way to use jackfruit! Serve it in sandwiches or wraps for a delicious lunch or dinner that's ready in 30 minutes.
Prepare the jackfruit
Pull apart the jackfruit pieces, then mix it with cumin, garam masala, dried coriander, apple cider vinegar, sriracha, coconut sguar and BBQ sauce.
Bake the jackfruit at 180 degrees C/350 F for 20 minutes.
Cook garlic, onions and shiitake mushrooms in olive oil until softened.
Add the jackfruit, water, tomato paste, water and the rest of the BBQ sauce.
Or keep in the fridge in an airtight container for 3-4 days.
Serve in a sandwich!
Serve the jackfruit with avocado, lettuce, dairy-free mayo, and other veggies of your choice.
