It’s almost the holiday season, which means everyone is on the internet hunting for recipes to brig to the table. 90% of people end up making the exact same thing, every time. Or rely on store-brought options. Or get too stressed out to actually make anything. I don’t want to fall into any of those categories this year, so I’m making an effort to step up my game. Well, I mean, I started blogging around two years ago, so my 2018 game set high standards. But there’s always room for improvement!

 

Hence, here we have a classic vegan sweet potato casserole recipe, amped up with the addition of carrots and kale. Trust me, it’s practically effortless but will impress everyone!

The holidays used to be a tricky time for people with dietary requirements. I remember celebrating my first Christmas as a vegan. I had no idea what to make, and almost succumbed to the fate of eating a meal of Brussels sprouts and potatoes. In 2020, however, not only is there an abundance of online resources (like this one :’)), but ready-made options in supermarket too.

Of course, if you plan on doing the cooking yourself, you most likely also have non-vegans to think about. After all, no one wants to end up with a forced smile, yet still obvious disappointment reaction from your loved ones. Which is where this vegan sweet potato casserole comes in. You don’t need any fancy ingredients to make it – just stuff you can find at your local store. This dish has a perfect level of sweetness which is balanced out by the addition of tamari and peanut butter (sounds unusual, but it works super well). The sweet potato is smooth, creamy and practically melts in your mouth.

I also added carrot and kale to this vegan casserole for extra texture and just general oomph. After all, the more vegetables the better! In particular, the kale and sweet potato pair so well together. I’ll be having that combo much more going forward.

Of course, this is perfect as a side dish. But with the addition of a protein such as chickpeas or tofu, it could definitely pass as a main, too. So feel free to tailor it to your preferences!

  • Sweet potato.
  • Nutritional yeast. Great for adding a slight cheesy flavour.
  • Cumin.
  • Paprika.
  • Peanut butter. Will help the texture, while also adding an earthy, nutty undertone.
  • Apple cider vinegar.
  • Tamari. You can use soy sauce if not avoiding gluten, or coconut aminos for a soy-free version.
  • Fresh garlic. Garlic is a must in comforting savoury dishes!
  • Red onion.
  • Carrots.
  • Kale.

How to make this easy Thanksgiving side dish

  • Preheat the oven to 200 degrees C/400 F.
  • Boil the sweet potato pieces for around 15 minutes, until fully softened. Drain and rinse, and then transfer to a bowl and mash with a potato masher until smooth.
  • Add the nutritional yeast, cumin, paprika, peanut butter, apple cider vinegar, tamari, garlic, onion, carrots and kale. Mix together really well, then transfer to a rectangular casserole dish.
  • Bake in the preheated oven for 20 minutes. If you want to, you can sprinkle with gluten-free breadcrumbs for extra texture.
  • Serve immediately or store in an air-tight container for up to 3 days.
