You know those recipes that seem really complicated at first, but really aren’t? That’s what I thought about vegan mac and cheese, and it’s how I feel before attempting any sort of baking (savoury food comes much more naturally to me, and invade you want to see my baking fails from time to time, make sure you’re following along with my Instagram stories). I thought that vegan pho would be a complicated recipe too. But in fact, it’s possible to make vegan pho in around 35 minutes, and still have it taste pretty close to the authentic version!

About this vegan pho recipe

I’m surprised it took me this long to attempt homemade pho. Even if it did turn out to be a complicated recipe, I’m not usually one to shy away from recipe challenges. I like a mixture of straightforward and a little bit more fancy. However, this version is definitely suitable for a weeknight dinner because of how quickly it comes together!

The key to a really flavourful pho is the mixture of spices that are used in the broth – garlic, star anise, cloves and a cinnamon stick. That makes the base broth, and what you use for extra flavour and toppings really is up to you. I used miso paste to add a little bit of variety. For my toppings, I opted for shiitake mushrooms and tofu.

This vegan pho makes a great dinner if you are craving pho, but don’t want to head out to a restaurant. Sometimes, staying in with a yummy homemade meal is better, and requires nowhere near as much effort (regardless of how much I love discovering new restaurants)!

What ingredients will I need for vegan pho?

To make this pho, you will need:

  • Garlic
  • Onion
  • Spring onion
  • Star anise
  • Whole cloves
  • A cinnamon stick
  • Vegetable broth
  • Water
  • Miso paste (I use brown rice)
  • Tamari
  • Shiitake mushrooms
  • Rice noodles

How to make vegan pho

It really is super easy!

Firstly, add 3 of the garlic cloves, onion, spring onion, star anise, cloves and the cinnamon stick to a non-stick saucepan. Sauté for around 1 minute, until fragrant.

Then, add the veggie broth and the water together with the miso paste and tamari. Bring to a boil, then lower the heat and cover and simmer on a low-medium heat for around 30 minutes.

Meanwhile, add the shiitake mushrooms together with the remaining garlic clove to a non-stick frying pan and sauté for 5-10 minutes, until the mushrooms cook down.

Around 25 minutes into the cooking process, prepare the rice noodles according to instructions on packaging (this usually involves soaking them in hot water for around 5 minutes).

Taste the broth, adding more tamari if necessary. Then, serve over the noodles, together with the shiitake mushrooms and other garnishes of your choice.

  • Coriander
  • Lime juice
  • Red pepper (you can also use chillies)
  • Sesame seeds
