Oftentimes it is the simplest recipes that I prepare spontaneously that turn out to be my favourite. On the day that I created these cookies, I had a more complicated dessert recipe in mind. Long story short, it failed completely. The concept just didn’t work at all, and I knew that it wasn’t worth it trying again. So in frustration I made some cookies and on the second try, after just a little bit of tweaking, they were exactly what I was looking to achieve. I suppose that the life lesson here is that sometimes it’s okay and necessary to change your approach to get the result that you’re looking for!

Anyway, I won’t talk life lessons anymore as I’m too excited to share these simple vegan chocolate chip cookies with you! I hope you like them as much as I did.

As the name suggests, the key ingredient to these cookies is simplicity. They require no difficult-to-find ingredients, most if not all of which you already have in your cupboard. And if you’re a student like me, you’ll probably know how important it is to have a collection of your favourite yummy recipes that require little commitment in terms of time and energy!

It could be argued that there are in fact too many chocolate chip cookies out there already, but what I love about classics like this is that every variation has something unique about it! So yeah, there really isn’t such a thing as too many cookies in my opinion.

These cookies carry that familiar comforting flavour with just the right level of sweetness, interceded by melty chocolate chips that work perfectly with the dough. They are soft on the inside with a crunchy outside and a hint of chewiness. They are delicious enough by themselves, but you can also pair them with any nut or seed butter of your choice, serve them on top of oatmeal and smoothies, or crumble them into vegan yoghurt bowl with fruit and berries.

You can eat these vegan chocolate chip cookies as a dessert and snack, and even a breakfast on the go with your favourite tea or coffee! Plus, if you have a special occasion coming up, such as a BBQ given that summer is just around the corner, bring these along as a treat that everyone will enjoy.

How to make vegan chocolate chip cookies

  • Preheat oven to 180 degrees C/150 F.
  • Add the gluten-free flour, baking powder, coconut sugar and salt to a large mixing bowl and whisk together the dry ingredients. In a separate mixing bowl, whisk together the maple syrup, coconut oil and almond milk.
  • Combine the wet and the dry ingredients, also folding in the chocolate chips.
  • Using damp hands, roll the dough into small balls and gently flatten them down on a sheet of baking paper. Bake in the preheated oven for 8-10 minutes, until golden but still soft on the inside.

Ingredients

  • 1.25 cups gluten-free flour
  • 2 tbsp baking powder
  • 1/2 cup coconut sugar
  • 1/2 tsp salt
  • 4 tbsp maple syrup
  • 2 tbsp coconut oil, melted
  • 1/4 cup almond milk
  • 1/2 cup vegan chocolate chips

Instructions 

  • Preheat oven to 180 degrees C/150 F.
