Now that January is almost over, I thought it would be a good time to reflect on the month, just very briefly. Honestly, it’s been a very tough month and the year didn’t start as I’d expected. If you’ve been following me for a while, you know that I used to have an eating disorder that’s now thankfully 100% in the past. However, I still struggle with other mental health issues, which really got in the way of my life in January. Don’t get me wrong, I’m still really enjoying my course at university, practicing gratitude and appreciating every day as it comes, but if you’ve ever struggled with mental health yourself, you know how much harder these things can seem.

It’s quite hard for me to share stuff like this because, I don’t know, I want this blog and my Instagram to be a positive page. But I also feel like I’m being dishonest if I give the impression that life is perfect, when it never really is for anyone. And I believe that realness on social media is so important. What I can say is that these last couple of days have been looking more positive and I’m working very hard to get past this moment in my life. I suppose what I want to say is that if you’re going through something similar, you are definitely not alone even if it feels like you are and if you ever need someone to talk to, send me an email or a DM on Instagram and I will respond as soon as I can. Going forward, I will definitely discuss mental health on a more regular basis because I think that sharing my journey will help me and others too.

But now, let’s talk about the recipe that I’m sharing today, which happens to be my new favourite vegan fudge!

For some reason, I thought that dairy free fudge would be so difficult. However, it couldn’t be easier. So if you want to prepare a go-to sweet treat that doesn’t require hours of preparation, I suggest you give this fudge a go.

What’s great about fudge is that you only need 4 ingredients, and that’s if we count the nuts, which you can leave out. The resulting fudge is quite soft and chewy, as opposed to the crumblier type. And it is so good, it was difficult for me not to eat the entire batch by myself, hence I ended up sharing with my friends who all loved it, which means that this recipe is 100% non-vegan approved.

This fudge is great by itself or with some tea as an energising snack. I love eating this fudge before a workout. It’s also a yummy topping for smoothie bowls and porridge. I know that Valentine’s Day is right around the corner, and everyone is searching for sweet and chocolatey recipes. How to make vegan fudge

  1. Start by mixing together the sugar and the milk a non-stick frying pan or saucepan. Bring to a simmer on a low heat and stir for around thirty seconds to a minute. It is very important not to overheat it, so once the sugar has melted, quickly remove it from the heat.
  2. Stir in the peanut butter and the chopped nuts.
  3. Pour into a loaf tin lined with parchment paper.
  4. Leave in the fridge for 4-5 hours, ideally overnight. This vegan fudge lasts in the fridge for up to five days.
