Vegan Chickpea Meatloaf
A perfect plant based Christmas main course.
This vegan meatloaf is made with chickpeas and lots of vegetables! It's perfect for any special occasion.
Step 1
Add an onion, garlic, scallions, carrots, cumin, paprika and garlic powder for 5 minutes in olive oil.
Step 2
Add the mushrooms, celery and tomato paste. Cook for 5 minutes more.
Step 3
Transfer to a mixing bowl and combine with lightly mashed chickpeas, nutritional yeast, oats, soy sauce, apple cider vinegar, salt and pepper.
Step 4
Transfer to a greased loaf tin and bake for 30 minutes at 350 degrees F/180 degrees C.
Step 5
Make the glaze by whisking together apple cider vinegar, soy sauce, maple syrup, ketchup and cornstarch.
Step 5
Transfer the loaf to a baking tray, brush with the glaze and bake for 5 minutes more.
Serve immediately with any side dishes of your choice.
